CASHEW FROZEN CREAMY DESSERT Serve as a gourmet icecream.
1C finely ground cashew nuts
1/4 pint soya milk unsweetened
2t mild honey (acacia gives good results)
1t vanilla essence
1T sunflower oil
1/2 small tin crushed pineapple
Blend all the first ingredients till smooth, leaving the pineapple to one side. Add this when the other ingredients are creamy, then only blend for a short time. Be sure and leave some small pieces of the fruit visible. Freeze in a container for 2 hours or until firm. This is a rich food for special occasions so serve only small spoonfuls. It can be hard if served straight from the freezer section. Allow to 'relax' a little before serving.

 

FRUIT PIE OR FLAN
Make up a recipe of pastry as given above. Then choose a filling - Apple sweetened with date butter, or honey; rhubarb with date butter, plus 2T orange juice, which in some way takes off the sharpness; mixed fruits - gooseberries, black currants, apple and rhubarb, sweetened with date butter. The date flavour in these recipes does not dominate the fruit flavour. Cook in the normal way, and when serving allow smaller servings as the portions are filling.

FRUIT CRUMBLE
A quick recipe is to stew the fruit and sweeten with honey or dates, and place in a dish. For additional nutrition it is possible to add 2T adzuki beans that have been mashed to a puree. They have a very delicate flavour and can be used in sweet dishes.This mixture can be topped with a layer of crunchy whole-food cereal and baked until golden on the top.

 

What can be poured over pies and puddings in place of dairy cream and custard?
  • The Provamel vanilla soya dessert can be gently heated and poured as custard, or served cold on cold puddings.
  • Baby Soya milk powder can be made up with cold water, maybe slightly thicker than for milk and used as ‘evaporated milk’. Both of these are good flavoured toppings and suit the type of wholefood dessert you will be eating.
  • Commercial vanilla soya icecream in a variety of flavours is a valuable topping to melt on to crumbles and goes well with carob desserts.

Here is a simple topping recipe to try. This can be recommended.

3/4 C pineapple juice
1/2 C ground cashews
Pinch of salt
Blend all till creamy and well mixed. Chill

 

The best light dessert of all is a colourful, fresh fruit salad. Try and experiment with different fruit combinations. You may choose to have all tropical fruits like banana and pineapple, with a small amount of exotic fruit, juice for instance, guava. Stir into this a table spoon of fine desiccated coconut. Or you may want to have a green fruit salad with sliced green-skinned apples, kiwi fruit and green grapes, with a spoon or two of apple or grape juice. Let your culinary imagination run and give it an interesting name. Have fun! And compliments!
