DESSERTS FROM PLANT PRODUCTS

Almost everyone likes a nice dessert to slip down after a good meal. These recipes all provide life-enhancing ingredients but combined in such a way as to provide sweet flavours or mouth refreshing effects or just plain old-fashioned puddings, but made in a healthy way.
These recipes have all been tried and enjoyed. They are come back for 'seconds' recipes. Even the serving dish gets scraped clean too. Decorate them attractively and they will have instant appeal.

BASIC WHOLEMEAL PASTRY FOR PIES AND FLANS
1 Cup wholemeal flour
1 C porridge oats
!/2 t salt
Mix these together in a basin. Then place in a mug -
1/4 C sunflower oil (light flavour oil)
1/2 C very hot water
Whip these together with a fork.

Stir the two sets of ingredients together only enough to moisten all the ingredients.
For a pie shape into two balls, one slightly smaller than the other for the lid.

NOTE: For easy and clean rolling out. (this is a very soft pastry)
Tear off a piece of cling film, moisten the work surface with a damp cloth and smooth out the cling film onto it. Place the dough ball on it and cover with another layer of cling film. Roll out the pastry between the cling film sheets. When ready, remove the top sheet, place the pie dish over the pastry and invert keeping the bottom layer of clingfilm in place. When moulded into shape, peel off the layer of clingfilm. This is so easy and so clean—no more sticky hands in the pastry!

ORANGE PINEAPPLE PUDDING
This is a sharp, clean tasting pudding and is good to follow a more substantial meal.
2C orange and pineapple juice ( as bought in cartons)
2T lemon juice
14 dates
1/4C water
1T cornflour
1/4t salt
1/4C cashews

Using just enough water to cover the dates, gently bring to the boil, then cook till soft and thick. Add all the other ingredients and blend until smooth. The nuts can be ground separately for a smoother pudding and added to the blended mixture. When blended, pour into in a saucepan and bring to the boil to cook the cornflour, then place into a dish to cool and set. The top can be decorated with desiccated coconut or with a sprig of mint and a few sunflower seeds.

CAROB PUDDING
1C water
1/3 C carob powder
Cook these two ingredients in a saucepan for five minutes.
1 C ground cashews
1 C hot water
Blend these two together.
