MUESLI (Bircher-Benner Type)
Take porridge oats, grated apple, some raisins, chopped or ground hazel nuts and add soya milk or nut milk. Mix and allow to soak overnight. This is delicious in the morning and very satisfying and energy giving. The soya milk or prepared milks are of course not raw, but convenient. |
Think of the raw fillings that would go in a pitta bread. Learn how to cut vegetables to make attractive garnishes. Even a simple lemon or cucumber twist can liven up a dish. A spray of fresh mint leaves is an attractive garnish for fruit dishes, just as we use parsley on vegetable dishes. A sprinkle of paprika can add a warm colour to pale dishes. They say we ‘eat with our eyes’ and it is true. |

Eating food that is alive is very satisfying but takes a while to get used to after conventional cooking. The result however is that the whole system is lighter and more balanced. However you choose to prepare meals so that they are more healthy, the key is to remember that the bulk of your food is best raw.
If you have 25% of your food cooked here are some further suggestions. You might have a jacket potato with a large salad and a couple of raw burgers, or for breakfast a large fresh fruit dish first with some whole meal toast, a slice of rye bread perhaps, or small bowl of wholemeal cereal to follow.
Dried fruits count as fresh foods but they should only be taken in small amounts as should nuts, as they are a very concentrated food.
Olives and avocado are excellent too and provide the oil content of your meals. It would be good to have some avocado every day, and some olives or olive oil. Even if you feel you could not eat the recommended amount raw, any addition to a meal is a bonus to your health and wellbeing. Aim each day to eat a little more, even an extra apple, or juiced fresh orange. Add tomato halves to your dinner. Place a bowl of dried fruit and nuts on the breakfast table. |
Instead of cooking beans, some can be sprouted and then safely eaten raw, when they have their maximum compliment of vitamins and minerals. Try brown or green lentils first. Chick peas are also easy.

The benefits of raw food.
Returning to raw food is to return to the kind of food that was originally eaten, when God made human beings. It is natural ands clean to our systems and this is why it gives improved health. Dr Ralph Bircher of Switzerland lectured widely on the bonuses of raw foods to the body. He was connected with the Bircher-Benner clinic ( of his father), the home of muesli, that we all know today.
